These New Zealand lamb racks come from grass-fed lamb to produce a mild flavor and consistency. Each rack is bone-in for dramatic presentation and great flavor. There are 8 ribs per rack, and each rib is frenched, removing the meat and fat from around each rib bone to improve plate appearance.
