Product Description

  • A staple of Mediterranean and Middle Eastern cuisine, lamb foreshanks include part of the shoulder and upper leg of the lamb. The lambs are grain-fed, domestic and hand-selected for superb flavor and tenderness.
  • Lamb shanks are excellent braised or stewed. They are ideal for a wide range of applications, from upscale restaurants to family-style diners.
  • To braise, use a large, heavy pot to brown the shanks on all sides in olive oil. Transfer the shanks to a bowl. Then saute onions, carrots, garlic in the pot and stir in dry red wine, canned diced tomatoes with the juice, chicken broth, beef broth, rosemary, thyme and lemon peel. Return shanks to pot, cover, bring to a boil, then simmer until meat is tender.
  • The meat is rated USDA Choice because it offers ample marbling, and is tender, juicy and flavorful.
  • There are four, 105-ounce-average shanks per case. Store frozen for up to 180 days.
