Prepare your Dot Cakes
1. Bake the Base (The Cupcake Method)
To make assembly incredibly fast and perfectly portioned, you’ll want to bake these as large cupcakes.
-
Preheat your commercial convection oven to 325°F (163°C).
-
Line a standard muffin/cupcake tin with paper liners.
-
Fill the cupcake cavities nearly to the top (about ¾ full). You want them to bake up thick and tall so they fill out the dessert cups nicely.
-
Bake for 18–20 minutes or until a toothpick comes out clean. Let them cool completely.
2. Slice and Layer (The Double-Frosting Step)
-
Remove the paper liners from the cooled cupcakes.
-
Using a serrated knife, slice each cupcake horizontally right through the middle to create two even layers (a top half and a bottom half).
-
Place the bottom half of the cupcake into the bottom of the Cup.
-
Pipe a generous layer of icing over this first cake layer.
-
Place the top half of the cupcake directly on top of that frosting, pressing down gently to secure it.
3. The Flat Top Frosting Layer
-
Pipe a second layer of icing over the top cake layer, ensuring it fills the gaps between the cake and the walls of the cup.
-
Take a small offset spatula or a bench scraper, press it flat against the rim of the cup, and scrape across to create a perfectly smooth, level top that is flush with the rim.
4. The Dot Top
-
Pour a thick, generous layer of Rainbow Nonpareils onto a shallow sheet pan or a wide plate.
-
Invert the dessert cup completely and press the flat frosting top directly into the sprinkles.
-
Twist slightly to ensure 100% coverage edge-to-edge, then flip it right-side up. Tap off any excess.
