- These whole chickens are from Joyce Farms' Naked Chicken Program. Naked chickens roam in spacious heated or cooled barns and live in low-stress, humane surroundings with no overcrowding. Joyce Farms' birds eat only the healthiest and purest vegetable diet. Moist and tender, these breasts have been hand-cut and minimally processed.
- Stuff the cavity with rosemary and garlic and roast the chickens for a magnificent entree presentation. The skin will turn a beautiful brown and be crispy. The meat will be delectable and fall off the bone.
- Coq au vin is a French dish of chicken braised with red wine, bacon, mushrooms, rosemary and thyme. It is a natural for these heritage chickens.
