- These frenched elk racks are full of tender red meat. They're provided bone-in for better plate coverage and great flavor. The eight-bone rack is similar to a standing rib roast. It's a great beef alternative and tastes like a cross between venison and beef.
- The frenched process exposes part of the rib bones by cutting off the fat and meat for an elegant presentation.
- Elk does well with a variety of cooking methods, from quick grilling to long braising. For a good marinade, whisk canola oil, onion, lemon juice, Worcestershire sauce, soy sauce, garlic powder and pepper.
