- These boneless airline chicken breasts have the skin-on and are a half breast with the first wing joint attached. Airline breasts provide a hearty portion, excellent plate coverage, and upscale presentation. They are ready to grill or broil to perfection.
- These chicken breasts are from Joyce Farms' Naked Chicken Program. Naked chickens roam in spacious heated or cooled barns and live in low-stress, humane surroundings with no overcrowding. Joyce Farms' birds eat only the healthiest and purest vegetable diet. Moist and tender, these breasts have been hand-cut and minimally processed.
- Chicken breasts can be grilled, broiled, oven baked, fried or stewed. A delicious nod to the chickens' French heritage is Forestiere. The chicken is seared and roasted in a reduced wine and mushroom sauce and served over pommes puree. Wild mushrooms would truly raise this recipe.
- Pan-searing yields a delightfully crisp skin and tender, moist meat. Season the breast and sear it skin-side first in a hot, oiled pan. Sear the other side and place into the oven to finish cooking. Serve with the pan sauces and fresh rosemary sprigs for garnish.
